Winter Warmer Recipe - Chicken/Potato Pie
With winter well on it's way, why not treat the family to something a little special to chase the chill of winter away.
Ingredients:
8 (about 1kg) chicken thigh fillets, cut into 3cm pieces
200g smoked bacon, cut into batons
12 pickling onions, peeled, trimmed
1 carrot, peeled, thickly sliced diagonally
2 celery sticks, trimmed, thickly sliced diagonally
200g button mushrooms
2 garlic cloves, crushed
1/4 cup (60ml) brandy
40g butter
1/4 cup (40g) plain flour
1 cup (250ml) dry white wine
1 1/2 cups (375ml) chicken stock
3 sprigs thyme sprigs
2 dried bay leaves
4 (about 800g) pontiac potatoes, very thinly sliced
50g butter, melted, extra
Serves 4 People
Preparation time: 1hr 40mins
Recommended Cookware: Stoneline 28cm High sided Fry Pan, Stoneline 28cm Square Roaster with Aroma Lid
1: Preheat your oven to 160 degrees celcius. Add one quarter of the chicken to your Stoneline 28cm High Sided Fry Pan and cook, stirring occasionally, for five minutes until brown all over. Transfer to a bowl and repeat in 3 more batches with remaining chicken.
2: Add smoked bacon pieces to the Stoneline 28cm High Sided Fry Pan and cook for 2 minutes until crisp. Transfer to bowl. Add onions, carrot, celery and mushrooms to the pan and cook for 5 minutes until brown. Add garlic and after 1 minute add the brandy and cook stirring for 2 minutes or until the brandy reduces by half.
3: Add chicken and smoked bacon pieces to the pan with the butter and flour and cook stirring for 2-3minutes or until well combined.
4: Add wine, chicken stock, thyme and bay leaves and bring to boil. Remove from heat.
5: Transfer to the Stoneline 28cm Square Roaster, bake in the pre-heated oven, and cover with Aroma Lid for 1 hour until chicken is tender and sauce thickens slightly.
6: Increase oven to 200 degrees celcius. Combine the potato and extra butter in a large bowl. Season and arrange potato slices evenly over the chicken mixture. Bake uncovered for 30 minutes until potato is tender.
This meal provides you with the perfect dish for those chilly autumn evenings or the perfect treat for a weekend entertaining.

Heres a Beef and Vegetable Casserole that perfect for cooking in the 28cm Square Roaster:
Ingredients:
-2tbs Oil
-1.5kg Diced Beef Chuck/Blade Steak
-2 Onions, cut into wedges
-2 Leeks, sliced
-2 Garlic Cloves, crushed
-4 Sticks of Celery, sliced
-2 Carrots, diced
-2 x 425g Cans of Diced Tomatoes
-1/4cup Red Wine
-1cup Beef Stock
Method:
-Heat 1tbs of oil in a Stoneline 28cm Square Roaster, add diced beef, cook until browned, transfer to a plate
-Add remaining oil to the Square Roaster, add onions, leek, garlic, carrots and celery, cook for 5mins, stirring often
-Return beef to the pan and add wine and stock, bring to the boil, remove roaster from heat and place into the oven for 2hours, or until meat is tender
-Remove from oven and serve with mashed potato or rice
